Koki is a savoury black-eyed pea cake. The beans are peeled, ground, then whipped with red palm oil into an aerated batter, wrapped in banana leaves and steamed for hours. What comes out is firm and yielding, a deep orange. It is eaten hot with boiled plantains or cassava. It is a dish of patience and celebration, usually made in quantity to be shared, and one of the few Cameroonian dishes that is entirely vegetarian in its simplest form.
