Du taro pilé et bien tendre accompagné d'une soupe jaune à base d'huile de palme et d'épices, généralement servie avec de la viande, du poisson ou de la peau de bœuf.
Achu is a North-West dish, recognisable by its yellow soup. Taro is boiled then pounded to a smooth, elastic paste, served as a mound with a well in the middle for the sauce. The yellow soup takes its colour from palm oil emulsified with kanwa (limestone potash) and a blend of local spices; tripe, beef or smoked fish goes in with it. Achu is eaten with the fingers, lifting the paste and dipping it. It is a celebration dish, technically demanding, and few kitchens offer it every day.
