Cameroonian cooking reflects the diversity of the country: every region has brought its techniques and its ingredients. From the coast come the smoked-fish sauces and mbongo tchobi; from the western Grassfields, kondré and the groundnut dishes; from the North-West, achu and kati kati; from the anglophone South-West, eru and ekwang. The common thread is red palm oil, greens cooked at length, smoked fish and dried shrimp as the base of the seasoning, and plantain in every form. In Douala these traditions meet on the same menu.
